Stephen once told me that our kitchen pantry to me is like his Lego box. I can look at the different pieces in the "box" and see what fits together well. Here is the latest result of my imagination.
Simple Italian Soup:
1 med. onion
1-2 cloves of garlic
1 can diced tomatoes, drained (or fresh)
1-2 tbsp. Pizza topping (see note)
1 can cooked chicken, drained
1/2 bag pasta (approx. 8 oz.)
32 fl. oz. chicken broth

1 can cooked chicken, drained
1/2 bag pasta (approx. 8 oz.)
32 fl. oz. chicken broth
Chop onions and garlic.
Saute onions and garlic in a little olive oil until soft. Butter or any other oil can also be used.
Add tomatoes and pizza spices and cook for a few more minutes.
Note: We get this pizza topping at a store in Charlotte, TN. You might also be able to use an Italian spice mix instead.
Add the chicken (break apart if the pieces are too big).
Cook until the pasta is done. Top with Parmesan cheese if desired.
